While technically a member of the onion family, shallots stand in a league of their own. Sweet, but with subtle garlic notes, shallots don’t have the characteristic bite associated with onions so they won’t overpower other mild ingredients. Raw or cooked, shallots can be a revelation for the uninitiated.
