  • To maximize your body’s absorption of lycopene, cooking tomatoes with oil is the way to go. This creates a suitable environment for the antioxidant to grow.
  • Occasionally, tomatoes are picked while unripe and exposed to manmade ethylene in order to ripen during shipping. This causes the tomato to redden, but can diminish quality. Always buy fresh, local tomatoes for your kitchen!
  • Resist the urge for cooler tomatoes. They don’t handle the cold well, and lose their flavor if exposed to temperatures below 55℉, so store at room temperature.
