Stuff It: Tips for Better Stuffed Bell Peppers

If you took a random survey asking American eaters what their favorite bell pepper dish was, stuffed bell peppers would take the top spot. The beloved dish deserves its popularity; stuffed bell peppers are low-maintenance, have a flexible flavor profile, and are dang tasty to boot. Launch your stuffed bell pepper recipe into the stratosphere with these helpful tips!

  • Instead of using the first bell pepper you can get your hands on, try pairing the color of your bell pepper with your desired flavor profile. Bell peppers get sweeter as they mature, meaning that green bell peppers have a much sharper taste than orange or red ones.
    • Fun Fact: Chocolate bell peppers are the sweetest variety of them all.
  • Consider precooking your bell peppers before adding your filling. This can be done in a variety of ways; for example, you can steam them if you need time to prep other ingredients or you can grill them to add nice char marks.
  • Most stuffed bell pepper recipes call for rice, but we like to shake things up a bit by using quinoa or couscous instead. Not only are they both healthier than white rice, but they can add a fluffier texture to your dish if cooked properly.
  • While there’s nothing wrong with a standard bell pepper filling, don’t be afraid to get creative. The crowd-pleasing flavor of the veggie pairs well with off the wall ingredients like tuna, chicken pâté, and even spaghetti!
    • Pro Tip: For an unexpected treat, try adding stuffed bell peppers to your breakfast menu by using a “breakfast burrito” filling, i.e. scrambled eggs, Mexican cheese, black beans, and sausage!
  • Top it all off with some extra bell pepper. Literally. Once you remove the top of your veggie, trying dicing it and adding it to your stuffing or placing it on top as a “lid.”
