It can be tricky to know when nature’s smallest greens have reached their prime. When using fresh peas, it can be even more difficult to gauge freshness and quality. However, there are a few simple guidelines that can ensure your peas stay appeasing.

  • When selecting peas, opt for the smallest shells, as these typically are sweeter and more versatile. Larger peas mean older peas, and you’ll notice a milder flavor and thicker texture. Crisp, green pods will offer the best quality peas.
  • Did you know that you can tell how many peas are inside a pod by shaking it? If you hear a rattling sound, that means the pod is likely almost empty.
  • Never shell fresh peas until immediately before cooking. Unnecessary exposure to oxygen can lead to a decrease in quality or even spoiling.
  • When shelling, break the seam and run your finger through the inside to push the peas out. Be sure to place a container underneath for the peas to fall in to!
  • As opposed to their canned varieties, fresh peas have a pretty short shelf life. When stored in an airtight container in the fridge, they’re shouldn’t last longer than 3-5 days. Keep them in the crisper if you have room.
  • If you decide to freeze your excess peas, always blanch beforehand. This will limit discoloration and maximize quality once they’re thawed. Once the process is finished, frozen peas will last around a year in the freezer.
