Lunch Bunch: Soups and Salads That Rock Garlic

Where would we be without lunch? Scratch that, where would be without garlic? The two are absolutely essential to a thriving culinary life and we find ourselves constantly looking for new ways to add garlic to lunchtime soups and salads. Here are some of our top discoveries.

Heritage Golden Beet Salad

Customers are looking for new and exciting takes on familiar dishes and we’re so glad to have the Heritage Golden Beet Salad on our side. By covering golden and red beets, crunchy walnuts, Chèvre cheese, and quality lettuce with a garlic infused tahini dressing, you can create a unique salad that your customers won’t forget.

Autumn Harvest Soup

Soup is the best part of fall; don’t try and convince us otherwise. This delicious concoction from Salad Savoy combines Swiss chard with garlic and butternut squash for a hearty soup that keeps fall flavors at the forefront. For best results, make sure to only use the stalks of your Swiss chard.

Not-Your-Everyday Caesar Salad

Caesar salads may be a part of everyday life for some people, but that doesn’t mean yours can’t stand out from the crowd. For a unique spin, try making your own dressing by blending together garlic, mayo, anchovies, lemon juice, Worcestershire sauce, and black pepper! Click here to get the recipe.

Grilled Watermelon and Kale Salad

If you really want to blow your customers out of the water, consider adopting this Grilled Watermelon and Kale Salad recipe from the Watermelon Board! This salad pairs two different types of kale (dinosaur and baby kale) with grilled watermelon to create a balance of juicy and crisp textures. Rather than add whole garlic the salad, we prefer incorporating it into a balsamic vinaigrette.

Arugula Cauliflower Pearls & Barley Soup

Chef Matt from Taylor Farms has come up with a recipe that proves there’s nothing cauliflower can’t do. Arugula, celery, yellow onions, cauliflower pearls, minced garlic and more come together for a hearty soup that’s vegan friendly. If that’s not your jam, add sausage, meatballs, or tofu.

Hail Kale Quinoa Salad

Bring out the hippest grain of them all with the Hail Kale Quinoa Salad from Taylor Farms. Aside from looking positively delightful on the plate, this salad offers a nutritional boost through baby kale, cauliflower, grape tomatoes and cucumbers! Garlic is used in an interesting way here; we like adding it to a blood orange vinaigrette to compliment sweet/tart flavors. Get the recipe here.

Spinach Mediterranean Salad

There’s nothing wrong with a classic. Taylor Farm’s Spinach Mediterranean Salad uses the best parts of Mediterranean salads and infuses them with an arugula chimichurri dressing that contains lingering notes of jalapeños and garlic. Check out our instructional video for more info!
