Pear, Gorgonzola & Walnut Pizza

This recipe makes six 8-10 inch pizzas.

Ingredients

  • PIZZA DOUGH:
  • 2 cups (16 oz) Lukewarm Water
  • 2 tsp Active Dry Yeast
  • 2 tsp Granulated Sugar
  • 1 tsp Salt
  • 2 1/2 tbs Olive Oil
  • 5 1/2 - 6 cups (1 1/2 lb. - 1 lb. 14 oz.) All Purpose Flour
  • TOPPINGS & ASSEMBLY:
  • 1/3 cup Olive Oil
  • 2 cups (8 oz.) Gorgonzola Cheese
  • 3/4 cup (3 oz.) Walnuts, lightly toasted and coarsely chopped
  • 3 each USA Pears, firm but ripe, cored and thinly sliced
  • 1/2 tsp Black Pepper, freshly ground
  • 1 1/2 tsp Thyme Leaves, fresh

Directions

  1. PIZZA DOUGH:
  2. Combine water, yeast and sugar in a large bowl and let stand 5 minutes or until yeast is active and slightly foamy.
  3. Add salt, olive oil and 5-1/2 cups flour. Stir to make a soft, smooth dough adding more flour as necessary.
  4. Knead dough by hand until it is smooth and elastic, or scrape dough into the bowl of a mixer fitted with the dough hook. Mix on medium speed until dough pulls away from sides of bowl and is smooth and elastic.
  5. Remove dough from mixing bowl and place in a large, lightly oiled container. Cover and let rise about 2 hours or until doubled in size.
  6. TOPPINGS & ASSEMBLY:
  7. Gently deflate risen dough and remove from bowl to a lightly floured work surface.
  8. Lightly knead dough a few times and divide into 6 equal pieces. Roll each ball into a 1/4-inch thick round, 8 to 10 inches in diameter.
  9. Slide rounds onto baking pans covered with sheets of parchment paper or foil.
  10. Lightly brush each dough round with olive oil, and sprinkle with 1/3 cup cheese and 2 tablespoons walnuts.
  11. Evenly distribute slices from 1/2 pear over each crust, about 12 slices per pizza. Sprinkle with freshly ground black pepper.
  12. Bake pizzas in a 450°F oven until cheese has melted, pears have softened and the crust is golden brown, 12 to 15 minutes.
  13. Remove pizzas from the oven and sprinkle each with 1/2 teaspoon thyme leaves
  14. Cut each pie into 6 slices and serve.
