Caramelized Opal Apples

  • 700 grams sugar
  • 50 grams butter
  • 7 grams cinnamon (ground)
  • 3 Opal Apples
  • Olive oil


  1. Slice Opal Apples lengthwise.
  2. Make dry, light, caramel drizzle with sugar.
  3. Add butter, vanilla, and cinnamon.
  4. Coat the bottom of the pan with olive oil.
  5. Heat the pan on medium-high heat until the oil is shimmering. Add the apple slices and stir to coat the apples with the oil.
  6. Stir consistently.
  7. Pour in caramel drizzle, then strain some of the caramel and reserve aside.
