Ingredients

  • 4 slices artisan bread, toasted
  • 1 ripe avocado, coarsley mashed
  • 2 hard boiled eggs, sliced
  • 1/2 red onion, sliced thin
  • 4 pieces crisp bacon, crumbled into large pieces

Directions

  1. Spread mashed avocados on toasted bread.
  2. Top each slice of bread with ½ sliced, hard-boiled egg.
  3. Evenly sprinkle onion slices and bacon on toast to create open-faced servings
