Though botanically a vegetable, rhubarb is more akin to fruit in the culinary wold; you're more likely to find it stewed or baked than served in a salad. Rhubarb isn't a one trick pony however, as the perennial plant is occasional found in savory dishes. Regardless of your dish, be sure to only use the stalks, as the leaves are inedible and potentially harmful.
